Former Miss Great Britain Sophie, 30, had been official with Tom, 24, before his elimination on Thursday night, and as Tom left, he told Sophie that he loved her and would wait for her.
But when newbie Katie, 20, arrived on Friday evening, declared herself bisexual and said Sophie was totally her type, there was clear chemistry between her and Sophie.
So it was no surprise Katie asked Sophie on a date.
As the two newcomers, Katie and recruitment consultant Adam Jukes, 23, were both allowed to ask three islanders on a date: one for lunch, one for afternoon tea and one for dinner.
Katie chose Alex Bowen for lunch, Adam Maxted for tea and then Sophie for dinner, much to the excitement of the men in the villa… and frustration of Cara de la Hoyde and Kady McDermott, who felt too much pressure was being put on the women.
The date, however, went swimmingly, with Katie and Sophie admitting to fancying each other, discussing past relationships and ending the night with a kiss.
Sophie told Katie: "You coming in here was like a godsend to me. I was ready to give up. You came in with this new energy and I thought, 'She could be really good in here.'"
She also asked Katie who she preferred: her or Adam.
"Completely you," replied Katie. "Honestly, really, honestly, I really do."
"I'm so glad you're here," said Sophie. "I feel like you're almost like an angel sent into the villa at a time when I'm at my lowest ebb."
Katie responded: "I want to pick you up, bring you out and make you giddy and excited. You should be excited. It will be one hell of a ride! I'm so glad I picked you and saved the best until last."
They ended their date with a kiss – and lots of giggles!
But while Katie and Sophie are clearly very happy, what about Tom?! He had told Caroline Flack after his exit that he trusted Sophie and she could trust him, and he saw them having a future together.
"Yes, I did [tell Sophie I love her]. I realised weeks ago. I'm just crazy about her," he said. "I do think there's a future there with Sophie. We've planned things and are going to follow through, 100 per cent."
