The inspirational author and presenter is preparing for the brand new series of Bodyshockers, which returns to Channel 4 at 10pm this evening.
She appeared on Lorraine today to chat about the show and how things are going in her own life, following her marriage to Richard Sutton in November.
"It was amazing and we postponed it so many times because I had all these problems with my throat so in the end we were able to go through with it. It had been quite a difficult year health-wise so it was a nice way to end the year and it was a small thing, close friends and family," she said.
The couple's young daughter Belle was, of course, guest of honour... but will she be getting a brother or sister in the coming years?
"I don't know," said Katie. "I mean, I think it's a blessing to have the one and I'm sure she would love a sibling - I'm one of three and I know it's so nice to have that relationship."
Katie, 32, also touched on the most recent operations she's undergone. She was horrifically injured in 2008 when a former boyfriend arranged for an accomplice to throw acid in her face. Since then, she's undergone numerous procedures and set up her own charitable foundation to help others.
She said: "I had a nose surgery just after my wedding in November and I've got to keep the tubes in for two years. Do you know what - the choice is like wear it and be able to breathe or don't wear it and can't breathe!"
Katie added that Belle is starting to notice when she has a surgery and is preparing for the day she'll explain everything to her daughter. "It's coming up, I can feel it because we were on holiday last week and she pulled my nose tubes out and threw them across the room, so she's noticing different things.
"I'm sure as she starts to put more sentences together maybe she will ask things. But that's fine, I'm just going to be the same with her as I am with everybody in my life and it's just part of me and who I am."
