The music mogul only became a dad last year, and already it seems he is hoping to expand his brood.
Talking to the Daily Star, Simon revealed: "I wouldn't rule anything out right now."
When asked if he would be adding to his brood, Simon said: "[Eric] is adorable. Maybe I just won't make plans and see what happens."
Dad-of-one Simon became a father for the first time a year ago to son Eric.
Born on Valentine's Day, little Eric has just turned one years old and reflecting on fatherhood so far, Simon has said it has been "easier than he thought".
Admitting the arrival of his mini-me was "unexpected", the 55-year-old has said he is enjoying every minute of family life.
Meanwhile, when he's not doting on his baby boy, Simon has been busy seeking out this year's hopefuls for Britain's Got Talent.
Last week, Simon joined fellow judges Alesha Dixon, Amanda Holden and David Walliams as they wrapped up auditions in London.
While there, Amanda revealed she may be stepping down as judge after next year's series.
Having starred on the show for the last nine series, Amanda said she would consider calling it a day on the BGT panel after her tenth.
"Ten years is an amazing feat," she said. "I would love to make it ten and then call it a day."
Britain's Got Talent is set to return to ITV later this year.
