The TV presenter, 35, and her professional partner Pasha Kovalev beat fellow finalists Frankie Bridge, Simon Webbe and Mark Wright to take the Glitterball trophy home on Saturday night (20 December).
After an emotional 15 weeks of training and hard work, Caroline took to Twitter to express her gratitude at winning.
She said: "I don't know how to say how grateful I am but... Thank you thank you thank you... Xxxxx."
Before the nerve-wracking live final, she had tweeted: "Nervous, feel sick, excited, feel sick, really brown, sparkly and feel sick #FINAL xx.
"Thank you for all the lovely messages... We're overwhelmed tonight... Would love to make the final 3... Please vote if you can xx."
She had also shown she was upset about newspaper reports the same day claiming she was a professionally trained dancer.
According to reports, the star spent three years studying dance at the Bodywork Dance Company in Cambridge, and received a musical theatre qualification at the age of 20.
Woke up to some horrible unnecessary mean spirited articles today..All I can do I go on tonight and do my best.. We've ALL worked very hard.— caroline flack (@carolineflack1) December 20, 2014
Addressing these stories, Caroline had written: "Woke up to some horrible unnecessary mean spirited articles today. All I can do I go on tonight and do my best... We've ALL worked very hard."
Caroline stormed to victory regardless of the negative press.
After presenters Tess Daly and Claudia Winkleman announced the results, Caroline gushed: "This is the best feeling in the whole world!
"I've been so lucky to get to know [the other contestants], it has been so lovely!"
Mark Wright was the first to be eliminated from the competition, before the final three went on to dance again.
Caroline became the first ever contestant to get perfect scores of 40 on all three of her routines and fell to the ground in disbelief as she was named the winner.
Celeb pals were quick to tweet their congratulations, with Olly Murs saying: "Seriously brilliant... you deserved it!"
Pasha, meanwhile, wrote: "Thank you everyone. @carolineflack1 was fantastic! ! A wonderful season: amazing fans. See you all on the tour. We won!"
