The speediest pudding recipe: Cornish "Hedgehog" Ice Cream

If you're not from Cornwall, you might not have heard of this hedgehog recipe, but it's super tasty and really easy to make.

Despite its name, we promise you there's NO hedgehog in this dish! It actually involves scooping ice cream and clotted cream into a crunchy waffle cone. This is then covered in piles of chopped hazelnuts for a crunchy and creamy pudding.

Simple and speedy, this is a great quick dessert that can be whipped up.

  • 1 large dollop Rodda’s Cornish clotted cream
  • 1 handful chopped hazelnuts
  • 1 waffle cone
  • 1 large scoop vanilla ice cream (or any flavour you prefer)


1 Simply scoop the ice cream into your waffle cone and smother with a large helping of Cornish clotted cream.

2 Then, carefully roll in a bowl of chopped hazelnuts until the clotted cream is completely covered.
