If you can't decide what to make her, then we reckon this delightful croque madam is a brilliant choice. It involves whipping up a traditional French Croque Monsieur, which is a yummy grilled ham and cheese sandwich.
Not stopping there, it's then topped with a cheese sauce and a fried egg yum! Serve with a bunch of flowers and steaming cuppa.
- 4 slices of crusty bread
- 2 slices of cooked ham
- 2 slices of cheese (cheddar or gruyère)
- 2 eggs
- 25g butter
- For the cheese sauce:
- 60g Primula Original cheese
- 12g plain flour
- 12g butter
- 125ml milk
- 1 teaspoon English mustard
- Salt & pepper
Method1 Melt 12g butter in a small saucepan, add the flour and cook over a medium heat for 1 minute until blended.
2 Gradually add the milk, stirring well until smooth and simmer gently until the sauce has thickened and cooked through. Add the cheese, mustard, salt and pepper and stir well into the sauce. Set to one side.
3 Preheat the grill to high and toast the bread on both sides. Arrange the ham and cheese slices on two of the slices of toast and place the remaining two slices of toast on top.
4 Spread half of the cheese sauce on each sandwich and place under the hot grill. Cook until the sauce is bubbling and golden, and the cheese is melting.
5 In the meantime, melt 25g butter in a frying pan. Fry the eggs until the whites are cooked and the yolks are still soft.
6 Serve each sandwich on a warm plate topped with your fried eggs!
