Whip up this gorgeous recipe for Turkey Caesar Salad

YAY! It's December 1 so we are officially allowed to talk turkey...well, turkey recipes, actually.

It's a lean and healthy meat which is a great substitute for chicken and you don't have to wait till Christmas Day to try it.

Turkey Caesar salad

We've used ready-made roast turkey chunks for this recipe, combining them with crisp lettuce, chunks of bread and yummy Parmesan cheese. Simply drizzle with a mayo and anchovy dressing for a tasty lunch option.

This is also a great recipe to bear in mind for all that leftover Christmas turkey later this month!


  • 100g Bernard Matthews Roast Turkey Chunks
  • Cos lettuce
  • 2 - 3 pieces thick sliced white bread, crusts removed
  • 2 tablespoons of olive oil
  • Parmesan cheese, freshly grated
  • For the dressing:
  • 2 anchovies, drained
  • 3 tablespoons of low fat mayonnaise
  • 1 - 2 tablespoons fresh lemon juice
  • Black pepper


1 For the dressing - mash the anchovy fillets until almost a paste. Stir in the mayonnaise and lemon juice and check the seasoning.

2 Rip the cos lettuce and place in a large bowl and add the turkey chunks.

3 Cut the bread into cubes and fry in the oil until golden brown.

4 Drain on kitchen paper and sprinkle over the salad with the cheese.

5 Add dressing to taste and serve.
