The recipe was created to celebrate 20 years of Freedom Food with Sainsbury's. It uses a whole lemon for a really zesty flavour, while juicy chicken pieces and a drizzle of honey completes this gorgeous dish. Although this is for the barbie, they can easily be cooked in the oven too, meaning you can enjoy all year round!
- 1 tablespoon extra virgin olive oil
- 1 tablespoon runny honey
- Zest + juice of 1 large lemon
- 2 Sainsbury's Freedom Food chicken breasts
- Sea salt
- Freshly ground black pepper
- 3 wooden barbecue skewers
Method1 Whisk together the oil, lemon juice, lemon zest, honey, a good pinch of sea salt and lots of freshly ground black pepper in a medium bowl and add the chicken, cut into large chunks.
2 Cover, and allow to marinate chilled for at least 2 hours, but try to leave it all day so the flavour has a good time to soak into the chicken.
3 While you're waiting for the barbecue to heat up soak the skewers in cold water. This will prevent them catching fire while you're trying to barbecue.
4 When the barbecue is ready to cook, divide the chicken pieces between the three skewers, and cook, turning occasionally until the chicken is cooked through
5 Baste the chicken, using a pastry brush with the leftover marinade every few minutes to make sure the chicken keeps moist and has maximum flavour.
