Liz McClarnon's easy-peasy recipe for this delish Blueberry Sour Cake

Liz McClarnon wowed Masterchef judges with her baking skills and now she's showing us how easy it is to whip up a treat with this blueberry sour cake.

The former Atomic Kitten singer has teamed up with Jeans For Genes Day, which takes place this Friday (19 September).

Do your own bit for the charity by making a gorgeous sweet treat and selling it on to friends and family. This tasty blueberry cake is easy to make and tastes amazing. Oh, and its colour fits in perfectly with the jeans theme!

  • 350g of blueberries
  • 220g self-raising flour
  • 3 eggs
  • 170g unsalted butter
  • 170g golden caster sugar
  • 120g sour cream
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract¬†
  • A tub of soft cheese
  • 100g icing sugar


1 Whisk the flour, butter, eggs, baking powder and vanilla until well mixed.

2 Mix in half of the sour cream (60g) and then half the blueberries.

3 Grease a cake tin, pour/spoon in the mixture into it and level it out.

4 Bake in the oven at 160c (fan oven) or 180c (conventional oven) for 55 minutes. Leave to cool while you make the icing.

5 To make the icing, simply mix the cream cheese, icing sugar and the rest of your cream cheese (60g) until smooth and when the cake is cooled spread evenly over the top of the cake.

6 To finish, garnish with the rest of your blueberries.
