Cancer Research UK has graciously shared this deliciously easy recipe from TV chefs The Chiappas to inspire you to take part in its brand new BBQ fundraising campaign on July 19 and 20.
The charity is asking BBQ fans to throw a big barbie party that weekend and ask attendees to make a donation to this really good cause. The Big BBQ Weekend takes place next week so here's hoping this recipe inspires you.
BBQ heroes can simply host a BBQ for friends and family and collect donations upfront or on the day. With Brits grilling more than anywhere else in Europe the stage is set for the biggest sizzling summer fundraising weekend the nation's seen!
These lovely veggie rolls are, say Channel 4 stars The Chiappas 'the perfect canape to kick start a summer barbecue, or even to add that dash of green to your plate.
'The best thing about this too, is that you can make extra of the lemon dip and have it to dunk your crisps into.'
- 4 Courgettes, sliced thinly lengthways, no wider than 5mm
- Lemon Dip / Spread:
- 200g cream cheese
- Juice of 1/2 a lemon
- Salt and pepper to season.
- Finely chopped chilli (optional)
Method1 Griddle your sliced courgettes until softened but still firm.
2 In a seperate bowl, mix the cream cheese with the lemon juice. If you like things lemony, feel free to add the juice of the other half of the lemon too. Season with salt and lots of black pepper.
3 Lay your courgettes on a surface and spread the lemon dip on the courgettes as if buttering toast. Then roll the courgettes up until they form a mini roulade.
4 For a little kick, feel free to add the chilli to the dip.
