We fell in love with this deliciously decadent-looking dish on first sight but, you know what? It's really pretty simple to make. And just the thing for an indulgent weekend brunch....or to celebrate US Independence Day today with!

Mexican-born Ana is a mum of two who lives in Arizona, a south-western state of the USA with her husband, Paul.

We love her food blog Fit Fun & Delish which lives up to its name with mouth-watering recipes like this which are packed full of healthy ingredients.

She says of this recipe: "I love banana splits and this is what inspired me to make this French toast."

Combining two north American staples - Maple Syrup and French Toast - Ana adds her own delicious customisation by adding fresh strawberries to the syrup, and layers of cream and chopped banana in between the toast.

The results, as you can see here, are simply stunning.


  • For the Strawberry Maple Syrup:
  • 1 cup fresh strawberries, chopped
  • 1 cup maple syrup
  • ½ tsp vanilla extract
  • For the French Toast:
  • 4 eggs
  • ⅔ cup milk
  • 2 teaspoons of cinnamon
  • 8 thick slices of a day-old white bread
  • Butter
  • Toppings:
  • Fresh cut bananas
  • Chopped Walnuts or Pecans
  • Cut strawberries
  • Whipped cream


Strawberry Maple Syrup:
1 In a small saucepan, place the maple syrup, strawberries, and vanilla.

2 Cook over medium heat. When the mixture begins to boil, lower the heat to medium low. Continue to cook, stirring occasionally to prevent mixture to sticking at the bottom of the pan. The syrup is ready once strawberries begins to breakdown. After about 5 minutes, remove from heat and serve warm immediately.

French Toast:
3 Beat the eggs, milk, and cinnamon together. Whisk until well blended and pour into a shallow bowl.

4 Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture.

5 Melt some butter over a large frying pan on medium high heat. Add as many slices of bread onto the skillet as will fit at a time.

6 Fry until brown on both sides, flipping the bread when necessary. About 2 minutes per side

7 Serve hot and top with the strawberry maple syrup, bananas, whipped cream, walnuts & strawberries.
