Healthy and tasty: Kale Salad with Beetroot and Goat's Cheese

If you're looking for some salad inspo, how about this kale, beetroot and goat's cheese number?

Kale is a super food – it's virtually fat free, is an excellent source of vitamins K, A, and C and can even help against some types of cancer. It's crunchy texture combined with tangy beetroot and creamy goat's cheese makes for the perfect summer salad.

  • 3 cooked beetroot, peeled and cut into wedges
  • 200g kale
  • 1 orange
  • 2 tablespoons walnut oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 80g soft goat’s cheese


1 Boil the kale for 5 minutes, drain and set aside.

2 Segment the orange reserving the excess juice. Whisk this juice with the oil, vinegar, honey and seasoning.

3 Toss the kale, beetroot, orange segments and dressing together.

4 Crumble the goat’s cheese on top of the salad and serve immediately.
