  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Dunn’s River Jamaican Jerk Seasoning (either wet paste or dry seasoning will work!)
  • 1 tablespoon Grace Jerk BBQ Sauce
  • 1 tablespoon olive oil
  • 1 packet of pre-washed salad leaves
  • 2 tablespoons sour cream
  • Juice of half a lemon

1 Cut each chicken breast into 5-6 large strips. Place in a shallow dish and add the seasoning. Rub evenly over the chicken strips. Cover the dish with cling film and leave to marinade in a cool place for at least 30 minutes – or overnight in the fridge.

2 Heat the oil in a large frying pan or wok and stir-fry the chicken strips for 5-7 minutes or until the chicken is fully-cooked through.

3 Remove the cooked chicken and set to one side. Add the BBQ sauce to the pan juices and cooks for 30 seconds to 1 minute in a high heat, stirring throughout.

4 Serve the strips drizzled with the pan juices, accompanied with a crisp mixed salad of mixed leaves, lightly coated with a cooling Caeser-style salad dressing made by mixing the sour cream and lemon and then tossing through the salad leaves – enjoy!
