The perfect summer treat: Mango Drop Scones

Scones are the perfect summer snack, you can have them with almost anything, anytime, anywhere and the mango flavour in this recipe will really satisfy your sweet tooth.

Decorate with a selection of soft summer berries and a scoop of yogurt for a little taste of summer.

Mango drop scones

  • 1 pot Mango Danio
  • 100g self-raising flour
  • Pinch of baking powder
  • 1 medium egg
  • 4-6 tablespoons skimmed milk or cold water
  • Selection of soft summer berries, such as blueberries, strawberries, raspberries


1 Mix the flour and baking powder in a bowl

2 Stir in the beaten egg, milk or cold water and add one pot of the mango yoghurt until evenly mixed, to form a batter

3 Preheat a heavy-based, non-stick frying pan and drop spoonfuls of the batter onto the surface, two at a time

4 Cook until bubbles rise to the surface and after about 3 minutes, turn the drop scones over using a palate knife

5 Cook until golden brown on both sides
