Summer Superfood: Make this Stilton, Pink Grapefruit & Avocado Salad

Yay! Summer is finally here and we're all craving fresh healthy food. Just like this superfood salad, in fact!.

Yummy Stilton and juicy pink grapefruit are mixed with the likes of fresh salad leaves and mustard. It also contains the superfood avocado, which is rich in vitamins and offers a whole host of health benefits such as lowering cholesterol and reducing the risk of diabetes.

Healthy and tasty? This could well be our new favourite lunch!

Stilton and pink grapefruit salad

  • 2 generous handfuls rocket or mixed salad leaves
  • 2 pink or red grapefruit
  • 1 large ripe avocado, peeled, pitted and sliced
  • 100g blue Stilton cheese
  • 1 teaspoon wholegrain mustard
  • 1 tablespoon olive oil


1 Arrange the rocket or salad leaves on 2 serving plates.

2 Using a sharp, serrated knife, peel the grapefruit, removing all the pith. Slice into segments, removing all the membrane – do this over a mixing bowl to catch all the juice.

3 Share the segments between the salads along with the slices of avocado. Break the Stilton into chunks and share between the salads.

4 Mix the wholegrain mustard and olive oil into the grapefruit juice and sprinkle over the salads. Serve at once.
