Halloween recipe: Gory Eyeball Juice Jellies with the Eeeek! Factor

Eyeball jellies

The "eyeballs" are actually lychees that are set in a fruity flavoured apple and raspberry jelly. If you can't get hold of lychees, just use black grapes instead. These fun jellies are so easy to whip up and will terrify your guests!


  • 12 fresh lychees or large black grapes
  • 12 small green seedless grapes
  • 12 blueberries
  • 1 sachet powdered gelatine
  • 500ml apple and raspberry unsweetened 100% fruit juice


1 If using lyches, peel off the skin and remove the stones. If using black grapes, split them, without cutting right through.

2 Push a green grape into each lychee or black grape, then push a blueberry into each one, so that the fruits look like eyeballs.

3 Put one “eyeball” into each of 4 serving glasses. Cover the remaining “eyeballs” and keep them chilled.

4 Pour 90ml of just-boiled water into a measuring jug and sprinkle in the powered gelatin, stirring to mix it in. Leave for about 5 minutes, so that it dissolves into a clear liquid.

5 Pour the cooled gelatine liquid into the apple and raspberry juice, stirring well. Share between the glasses and refrigerate until set – about 2-3 hours. Serve, decorated with the remaining “eyeballs”.
