Easy recipe for Welsh lamb, tomato, basil and goat's cheese tart

We've all gone Great British Bake Off (GBBO) crazy in recent weeks. So if you've caught the bug and fancy making your own pies and tarts, you could do a lot worse that starting with this easy and very tasty savoury treat.

This Welsh Lamb, Tomato, Basil and Goats Cheese Tart is great autumn comfort food and can be prepped, cooked and on your plate in 35 minutes. Doesn't it look tasty?


  • 225g (8oz) lean minced Welsh lamb
  • 500g packet puff pastry
  • 1 red onion, peeled and sliced
  • 10 cherry tomatoes
  • 3 mini leeks, sliced lengthways
  • Fresh basil leaves
  • Seasoning
  • 50g (2oz) goat's cheese, roughly chopped


1 Preheat oven to Gas 6, 200°C, 400°F.

2 Roll out pastry on a lightly floured surface. Measure and create a rectangle about 20 x 30cm. Using a knife score a border about 2cm from the edge.

3 Mix together lamb mince, onion, tomatoes, leeks, basil and seasoning.

4 Scatter the mixture over the pastry base and top with goat cheese.

5 Bake in preheated oven for about 30 minutes until filling is cooked and pastry golden.

6 Serve cut into wedges as a lunch with large pile of mixed salad leaves.
