Cheesy Cheddar Pancake Lasagne - a quick & easy family recipe

Swap pasta and meat for pancakes and cheese for this unusual but tasty twist on classic lasagne.

Cheesy Cheddar Pancake Lasagne


it goes without saying, it's incredibly filling too! Great comfort food for those chilly autumn nights.

You can buy ready-made pancakes but it's easy (and cheaper) to make your own, using this easy step-by-step pancake recipe (Obviously, leave the sugar and the lemon juice off the recipe if you're making the savoury pancakes for this dish)


  • Vegetable oil
  • 250g fresh spinach
  • 5 large pancakes
  • 500g jar tomato pasta sauce
  • 3 large tomatoes, thinly sliced
  • 150g Pilgrims Choice Mature Cheddar Cheese, grated
  • Black pepper
  • Salad to serve


1 Preheat the oven to 180

2 Lightly grease a cake tin or round baking dish with vegetable oil

3 Pack the spinach into a large saucepan and add a little water

4 Cover and cook for about 3-4 minutes and drain well

5 Put 1 pancake into the base of the cake tin and spread with one-quarter of the pasta sauce

6 Arrange a sliced tomato on top and sprinkle with cheese

7 Place another pancake on top and repeat the above steps

8 Transfer to the oven and bake for 25-30 mins

9 Cool for a few minutes and then slice and serve with salad
